
Today I’m sharing one of my all time favourite recipes that I’ve managed to make low fodmap (gluten free, low lactose and no onion or garlic) and still taste as good! I find it so warming and comforting but also light and summery and the fennel adds such a delicious flavour. Here is the recipe! x
Serves 4
Ingredients:
2tbsp garlic infused olive oil
400g sausages (gluten free and look out for onion and garlic!)
1 carrot, grated
1tsp chilli flakes
1tsp fennel seeds
1tsp oregano
4tbsp balsamic vinegar
400g tinned tomatoes
Serve with gluten free pasta
Method:
Remove the skins from the sausages and mix the meat with the grated carrot, chilli flakes, fennel seeds and oregano.
Add to a frying pan with the garlic infused oil and fry until the sausage meat is cooked, mixing regularly.
Add the vinegar, tinned tomatoes and a splash of water. Mix in and cook until hot.
Serve with gluten free pasta and top with parmesan.
